It’s a great creamy addition that also brings protein and healthy fats (thanks organic extra virgin olive oil!). Finally, the Hummus Stuffed Peppers are a tasty snack and perfect for your vegan friends. In less than 30 minutes, you’ll have something tasty for everyone to enjoy! Cucumber Hummus Bites
Ingredients
- 1/4 cup diced red onion
- 1/2 cup chopped grape or cherry tomatoes
- 2 tablespoons chopped flat parsley
- 1 teaspoon extra virgin olive oil
- 1 squeeze of fresh lemon juice
- salt and pepper
- 1 1/2 ounces crumbled feta
- 2 medium cucumbers
- 1 Package Blue Moose of Boulder Organic Original Hummus
Instructions
- Rinse red onion under cold water. Drain well or blot dry with a towel.
- Place tomatoes, onion, parsley, oil, lemon, salt and pepper in a small bowl and stir to combine.
- Chop and discard cucumber ends. Slice some or all of the skin off if desired.
- Slice cucumbers into 1/4 – 1/2 inch rounds.
- Drain excess liquid from tomato mixture.
- Stir in crumbled feta.
- Taste and add more salt and pepper if desired.
- Spread desired amount of hummus on top of each cucumber slice.
- Top with a small spoonful of the tomato mixture.
- Serve immediately or chill (covered) in the fridge until ready to serve.
Note: Best when enjoyed within 4 hours of making
Nacho Hummus Bites
Ingredients
- Tortilla Chips
- 1 Package Blue Moose of Boulder Organic Lime & Black Bean Hummus
- 1/2 cup chopped grape or cherry tomatoes
- grated sharp cheddar cheese (or pepperjack)
- pickled jalapeños (optional)
- 1 Package Blue Moose of Boulder Medium Salsa
- 1/2 cup chopped grape or cherry tomatoes
Instructions
- Preheat oven to broil.
- Spread a dollop of hummus on each tortilla chip.
- Sprinkle with grated cheese.
- Add jalapeños on top of cheese if desired.
- Broil on the middle rack for 1-3 minutes until cheese starts to bubble.
- Serve immediately with salsa on the top or on the side.
Hummus Stuffed Peppers
Ingredients
- 1 pound mini sweet peppers
- 1 Package Blue Moose of Boulder Organic Roasted Red Pepper Hummus
- 1/2 cup chopped grape or cherry tomatoes
- 1/2 cup toasted pepitas
- 1/4 cup chopped parsley
- 1/4 cup panko breadcrumbs
- salt
Instructions
- Slice peppers in half lengthwise and remove seeds.
- Fill each pepper half with hummus.
- Sprinkle with desired amount of tomatoes, pepitas, parsley, and breadcrumbs.
- Add a sprinkle of salt overtop.
Note: Best when enjoyed within 4 hours of making
Great ideas on a theme. Having eaten hummus for decades,it was always the dip of choice for peppers, cukes, etc. Why spoil something healthy with chips. But you’ve “fancied”it up for” company. But believe me, Ii goes just as fast without the extra work/effort. Perhaps more people will be comfortable if it’s a new to them, product.
